Keto coconut waffles




It's a rainy morning here so I felt like making up some scrumptious waffles.
Although I'm sticking to a strict keto diet that doesn't allow many carbs.  What's one to do?   Well honestly this is my second attempt at making low carb waffles, the last time I used keto protein powder and this time I'm  using some coconut flour.


To make these you'll need 

1/3 cup coconut flour 
1/3 cup cream
4 eggs
1 tsp. Vanilla extract 
1 tsp. Baking powder
Pinch of salt 

Instructions 
Grease and preheat waffle iron 
In a large bowl add eggs, vanilla and cream. 
Whisk together
Then add coconut flour, salt and baking powder right into wet ingredients.
Mix together completely.

Add batter evenly and cook for 4-6 minutes. 
Makes 3 waffles.

Toppings can include butter, berries, cinnamon, stevia sweetened whip cream or any no sugar keto friendly syrup or flavoring.

P.s.
If u left out the vanilla in the batter I think these would make an excellent keto bread substitute.

The bitter truth about sugar.

Expert panels worldwide have made consistent recommendations on daily sugar intake. A quote from an article on Forbes.com titled "Research Shows Cocaine And Heroin Are Less Addictive Than Oreos"  talks about high fat and high sugar diets.

In 1998 a Harvard nurses study using 90,000 nurses concluded that taking a multi vitamin daily reduced the risk of colon cancer by a whopping 75%.

Also in 1998 another study done by Harvard nurses compared those who ate more than 50% of their calories from fats to those who consumed 20% or less of their calories from fats.  They found no difference in risk for cancer.  The nutrient selenium has shown to be useful for those with cancer.

Are modern foods nutrient deficient?

Is it true?  According to many articles and recent research it appears that we are getting many less nutrients in our foods than we did 50 - 100 years ago.  Yes its true, if you didn't know before now you do.  
Don't worry we will discuss what steps you can take to stay healthy or get well.

Something's not measuring up.


We try our best to eat healthy, we are told to eat 5 - 10 serving of fruits and vegetables per day but these days natural foods aren't what they once were, we are not getting what our bodies need.  Ill share with you some highlights of different articles I've found.

An article in The Globe and Mail states "Modern farming methods, long-haul transportation and crop-breeding practices are all believed to be contributing to the drop in vitamins and minerals.
Phil Warman, an agronomist and professor of agricultural sciences at Nova Scotia Agricultural College, said there is no doubt the nutritional content of food is different today, due to the emphasis on producing cheap food.
"The emphasis is on appearance, storability and transportability, and there has been much less emphasis on the nutritional value of fruits and vegetables," he said."  Source*

The New York Times Sunday Review article posted and article called - Breeding the nutrition out of our food. and states " Studies published within the past 15 years show that much of our produce is relatively low in phytonutrients, which are the compounds with the potential to reduce the risk of four of our modern scourges: cancer, cardiovascular disease, diabetes and dementia. The loss of these beneficial nutrients did not begin 50 or 100 years ago, as many assume."  It can be read in full here

TIME Magazine says - "On the "Industrialization" of Agriculture: Thanks to the growing rise of chemical fertilizers and pesticides, modern crops are being harvested faster than ever before. But quick and early harvests mean the produce has less time to absorb nutrients either from synthesis or the soil, and minerals like potassium (the "K" in N-P-K fertilizers) often interfere with a plant's ability to take up nutrients. Monoculture farming practices — another hallmark of the Big Ag industry — have also led to soil-mineral depletion, which, in turn, affects the nutrient content of crops."  see more.


Some studies have found median declines in mineral composition between 5 percent to 40 percent in vegetables.

As you're beginning to see there are some real issues causing gaps in what were once nutritionally dense foods.  What is a person to do?  Well many of us take a supplement unfortunately the majority of supplements today are only 10% or so absorb-able.   So that's money down the drain all the while giving you a false sense of security.  I could go on about the low RDA's or fillers or not active forms of vitamins, but that's for another article.
